Cajun jambalaya - this recipe is compliments of Jellywick, thanks so much!
1 lb. Shrimp, peeled and deveined
1 lb. Smoked sausage, diced
2 tablespoons olive oil
1 large onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 rib celery, diced
1 cup sliced green onions, divided
1/4 cup parsley, finely chopped
2 cups white rice
3 cups chicken or vegetable stock
salt and pepper to taste or Creole seasoning to taste
In a large, heavy dutch oven heat olive oil and brown the sausage. Remove from pot and set aside. Add onions, peppers, garlic, half cup green onions, and celery. Saute' until light golden and tender; add cooked sausage, parsley, shrimp, rice, stock and seasonings. Bring to a boil, stir then reduce heat to a simmer and cover pot. Cook for about 20-25 minutes or until rice is fully cooked and no liquid remains. Remove from heat and stir in remaining green onions. Adjust seasoning and spices to taste.
