Fish with vegetables
This recipe comes from my cousin Madiha, thanks dodos!
2 pounds fish fillet
salt & pepper
1 tsp cumin
1 lemon juice
1tsp mustard
4 cloves of garlic crushed
tbs oil
3 cloves of garlic crushed
1 eggplant thinly sliced, put in salted water till ready.
3 bell pepper yellow, red and green thinly sliced
1 onion sliced
2tbs tomatoes sauce
1/2 tsp ginger
Mix cumin lemon mustard garlic and oil with the fish and cook in 350 oven for about 15 min
meanwhile in fry pan sauté onion, garlic for 2 min add the vegetable and sauté for about 5 min
add the tomato sauce and ginger for 3 min.
In a serving plate arrange fish and top with vegetables. Finish with lemon and tomato slices.
