Samak ma'ly (fried fish)
Serves 4-6
2 lbs cut firm fish of your choice
5 cloves garlic crushed
1tsp cumin
juice of 1/2 large lemon
salt & pepper
chili powder (optional)
rinse fish and pat dry. Add garlic, cumin, salt, pepper, lemon juice and chili mix well and let marinade for about 30 minutes.
1 cup flour
1/2 cup cornmeal
1tsp baking powder
1/2 tsp baking soda
salt & pepper
1/2 tsp cumin
1/2 tsp chili
oil
add all dry items to a plastic bag and add the fish, shake well to coat. Heat about 2 inches of oil in a deep frying pan, carefully drop the fish 2-3 pieces at a time and fry about 4 minutes till golden
