Prime Rib Roast (My Recipe)
In this recipe I wont be calling for measurements, its liberal sprinkling of seasoning. Allow 1 lb per person.
7lb Prime Rib (bone in) or larger, short end is preferable
Olive Oil
Salt & Pepper
Crushed Thyme
Garlic Powder
Onion Powder
Paprika
Dijon Mustard or Grain Mustard
Sugar
In a bowl combine all seasoning up to Mustard and mix well.
Rinse meat and throughly dry. Place meat in large grilling pan, rack is not required. score meat with sharp knife and rub liberally with olive oil, generously season the Prime Rib on all sides with seasoning mixture, add a few dollops of mustard and sprinkle with sugar and massage throughly, again both sides and ends. Allow meat to come to room temperature approximately 2 hours. Preheat oven to 450.
Place meat in oven for 15 minutes then lower temp to 350, baste meat every 15-20 minutes. Roast until internal temperature reaches 125 for medium rare. Remove from oven and allow roast to sit for at least 20 minutes before slicing. Serve with Au Jus Sauce and Horseradish. I just made this for Christmas 09 and I must say it was one of the tastiest Prime Ribs Ive made and the mustard and sugar seemed to help crunch up the outside.
