Roz bil shariya (rice with vermicelli noodles)

1 tbsp *ghee or Crisco
1 cup crushed vermicelli noodles
2 cup rice
3 1/2 cups water

Rinse and drain rice,
in a medium size pot heat Crisco or ghee, add vermicelli and fry on med high while stirring continuously until pink. 
This must be watched or the noodles can burn easily.
Add rice and salt stir to combine with noodles. Add water and taste for seasoning. 
Rice should always be salted while cooking not after.
Bring to a boil, then simmer covered for 25 minutes or until tender and water is completely absorbed
note, always use a fork to fluff rice.  Serves 4-6
*Ghee, is a clarified butter with a very nutty, distinct and rich flavor and can easily be found in
middle eastern or Indian grocery stores.  Due to its rich flavor you may want to start with 1/2 ghee to 1/2 margarine.
