Sambousa bil Lahma (Meat turnover)

Makes 20 to 40 according to size

1 tsp olive oil
1 medium size onion finely chopped
1 small grated carrot
1 pound ground beef or lamb or mixture of both
1tsp cinnamon
1/4tsp nutmeg
1/2 tsp allspice
1/4 tsp ground cardamom
Pinch of ginger
1/2 tsp oregano
Salt and pepper to taste
1/4 tsp cayenne or more according to taste
1/2 tsp garlic powder
1/2 tsp of flour
1/2 bunch parsley finely chopped
1 pound puff pastry or Fillo dough
1 egg +1 tsp of water mixed well for egg wash
Pre-heat oven to 350

Heat a pan with the oil add onion stir for minute add the meat and the carrot add the spices and stir for about 7 minutes.
Add the flour to absorb all liquid add chopped parsley, cook for another 2 minutes till meat is cooked. Adjust spices as needed.
On a floured surface open the puff pastry and with a cookie cutter cut rounds of the dough according to your desired size. Smaller, about 2” for appetizers or larger for snacks.
Using a teaspoon spoon the cooled filling on the rounds, moisten the edges with the egg wash and shape like half moon brush with egg wash and arrange on oiled baking sheets (If using Fillo you can make them in a shape of triangle by folding 3” strips brushed with oil and folded flag shape).
In a pre heated oven bake the meat pies for about 7 to 8 minutes or till golden brown . Serve hot.
You can freeze uncooked turnover, bake frozen and add 1 or 2 minutes to the baking time.
