Shrimp and Broccoli over pasta

THIS RECIPE IS COMPLIMENTS OF ELIZABETH AND PASQUALE, OUR VERY DEAR FRIENDS....ACTUALLY THEY ARE MORE LIKE FAMILY TO US!

3 garlic cloves - peel and either slice thin by hand, chop or put through garlic press

a head of broccoli washed and cut into floweretts

2 cups of water or chicken stock

depending on the size of the shrimp - 6 to 8 shrimp per person

clean shrimp and set aside

1/4  cup of olive oil

1/4 cup of white wine or cooking sherry

1 tablespoon of butter

one large sauté pan/frying pan

5 to 8 quart pot 

Heat oil in frying pan and then add you garlic and sauté until slightly golden

Now add the broccoli and add the 2 cups of water and cover until until broccoli is tender

(do not overcook)

Now add the shrimp salt and pepper and white wine or sherry and butter (dash of crushed pepper optional)

Cover and cook for about 10 minutes

Now remove from burner until you ziti or spaghetti is cooked (one pound will serve 4 people)

Fill 6 to 8 quart pot with water and add a teaspoon of salt

Bring water to a boil then add ziti or spaghetti

NEVER OVERCOOK YOUR ZITI OR SPAGHETTI

WHEN PASTA IS SLIGHTLY FIRM DRAIN AND LEAVE VERY LITTLE WATER IN PAN

(MAYBE 1/4 CUP OF WATER) 

NOW REHEAT YOUR SHRIMP AND BROCCOLI AND ADD TO YOUR PASTA

YOU ARE READY TO EAT

Serve with grated cheese if you wish
