Taboulah (parsley salad with burghul)
1-cup medium grain burghul, soak in cold water for about 30 to 40 min.
3 bunch of parsley washed and chopped finely
2 bunch scallion washed and chopped
2 small cucumbers sliced thinly
1 bunch mint finely chopped - reserve 1-2 sprigs for garnish
3 or 4 tomatoes chopped
1 Small red onion sliced to similar size as tomatoes
1/2 a cup of good quality olive oil
Juice of 2 lemons more to taste
salt & pepper
1 head romaine lettuce (optional)
In a fine sieve drain the burghul and spread on a pepper towel to dry
In a bowl mix parsley, scallions,mint, tomatoes and onion.
In a small bowl mix oil,lemon juice, salt and pepper. Adjust to your taste add to the Taboulah mix and toss.
Arrange lettuce leafs upright - fan shaped around the serving bowl add the Taboulah and garnish with a sprig of mint.
