Addes bil lamoon (lemony lentil with rice)
This dish brings back memories for my mom, seems my great grandmother used to prepare this meal for my mom and my aunt to greet them after school!
This dish starts with basic recipe for lentil soup but, its thickened with rice and flavored with lemon juice.  Lentil soup on its own is rather filling, the addition of rice really makes for a rather hearty dish.  
 
Serves 4
 
1/4 cup rice soaked
1/2 portion lentil soup (see recipe under soup tab)
1/2 cup water
1/3 bunch parsley chopped finely (reserve a few leaves for garnish)
1/3 cup lemon juice
2 tbsp butter
 
Soak rice for 5 minutes, drain. 
Combine lentil soup and rice, add water and cook over medium heat till rice has cooked completely, 10-15 minutes.  Add more water if needed, not too much this dish is more of a porridge type consistency.
Add parsley and lemon juice cook for another 2 minutes.  Add butter, stir to combine.  Garnish with reserved parsley.
Allow to cool before serving and serve with dried/toasted pita bread.
