Lobia Bel Eayn Soda - Black Eye Pea Stew

1 cup black eyed peas

1 tablespoon ghee

1 medium onion diced

3 gloves garlic chopped

1 8oz can tomato sauce

Salt & Pepper

Thoroughly rinse beans, cover with water and boil till cooked but, tender. In a pot add ghee once melted add onions and cook till translucent. Add garlic, tomato sauce and 1 cup water. Bring to a boil, reduce heat to medium to medium low and cook 30 minutes.

Add beans and allow to simmer for another 30 minutes. Serve with rice.
