Moe's (my brother) Mojito's
Prepare simple syrup - 1 to 1 sugar and water.
This is per drink:
12-15 mint leaves (depending on size). Avoid the packaged mint, if possible.
1/2 lime
1 oz simple syrup
1 1/2 - 2 oz. white rum (Bacardi Superior is fine) depending on how much "fun" you want to have.
splash of club soda.
Put 12-15 mint leaves and the juice of half a lime into a pint glass and muddle until the scent of mint overpowers the scent of lime.
Add 1 oz. simple syrup, muddle again a bit as the mint leaves stuck on the bottom of the glass have now floated up.

Add 1 1/2 to 2 oz. white rum (again, depending on how much "fun" you are planning on having).
Top with enough club soda that the it becomes a bit fizzy. You will see the top fizz when you have added enough.
